Ferrero Rocher-style hazelnut balls

Breastfeeding had me craving chocolate like you wouldn’t BELIEVE. I don’t do so well with refined sugar and there’s only so much dark chocolate I can eat before my tummy complains. The combination of nuts, chocolate and coconut oil make this Ferrero Rocher-style ball perfect to curb my chocolate craving and give me a boost of energy that keeps me going even when Baby Lemons insists on waking 18 times a night for feeding and cuddles (I wish I was exaggerating).

Note: Most nuts are low FODMAP and some can be if you eat them in moderation, including hazelnuts. It’s a tall ask but keep your servings to 3-4 to avoid getting fodmapped.

Ingredients

  • 100g hazelnuts
  • 100g walnuts or pecans
  • 2 tbsp raw cacao powder
  • 2 tbsp raw coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • pinch of salt

Instructions

  1. Roast hazelnuts at low heat in the oven until they’ve developed that delicious nutty flavour you’re looking for. Let them cool.
  2. Add hazelnuts, walnuts (or pecans) to a food processor and blitz. Depending on your preference, you can leave the nuts quite chunky or mince down to a finer consistency.
  3. Add oil (room temperature), maple syrup, vanilla essence, cacao powder and salt and blitz.
  4. Shape bite-sized balls and let cool in the fridge for 15 minutes.
  5. Tuck in.

      Depending on the size you are going for, perhaps 20. I usually double the recipe too as they don’t last very long over here 😏
